This is a mild type of tea with a unique, slightly herbaceous and characteristic tea flavor, as all the leaves are rolled without breaking during the drying phase and oxidation is stopped by passing them through steam.
Stopping oxidation has an effect not only on the flavor but also on the nutritional values. Oolong tea, which has a high antioxidant content, is known for its very relaxing and metabolism-stimulating effects.
Oolong tea is more heat-resistant compared to white and green tea.
However, in order for the rolled dried leaves to fully open and release their aroma, the brewing time is 2 to 3 minutes compared to these teas. it must be kept for longer.
It can be brewed 3 to 4 times by adding water repeatedly, and different flavors come out each time.

Pure Oolong Tea
Green tea leaves are steamed during the drying phase and their oxidation is stopped before they turn into black tea, resulting in Oolong tea. For this reason, Oolong tea is described as the form of tea between green tea and black tea.
During the drying phase, the tea leaves are rolled without breaking and the entire shape of the leaf is preserved. This ensures that Oolong tea can be brewed at least 3-4 times with the same taste and enjoyment, depending on its quality.
Although Oolong tea originates from China, it is also produced in Taiwan with very high quality. For this reason, it is generally referred to as originating from Taiwan. The main difference in the way these two countries cultivate Oolong tea is their different approaches to oxidation rates. In Taiwan, the oxidation process is stopped at an early stage with steam, while in China, steam treatment is usually applied to higher oxidation levels, thus obtaining an Oolong tea with a more pronounced aroma that is closer to black tea. Chinese Oolong tea was the preferred choice on the Te Chá menu because, thanks to its strong and characteristic flavor, it can better preserve its flavor when mixed with strong spices, fruits or other herbs.

Milk Oolong's popularity comes from the milky and creamy aroma of its leaves. Contrary to popular belief, this milky flavor does not come from the tea leaves being steamed with milk; the leaves themselves have this flavor and this flavor is enhanced by being more oxidized than other Oolong teas. Strengthening the milky flavor by steaming the milk before the drying phase is also a commonly used method.
